Coconut Raisin Bars Recipe

  • 2 eggs, slightly beaten
  • 1 cup Equal® Spoonful
  • 6 tablespoons unsalted stick butter or margarine, melted
  • 1 teaspoon vanilla
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup toasted flaked coconut
  • 1/2 cup chopped walnuts
  • 1/2 cup seedless raisins
  1. Beat eggs and Equal(r) in medium bowl. Mix in butter and vanilla. Combine flour, baking powder and salt; stir into egg mixture. Mix in coconut, nuts and raisins. Spread batter in lightly sprayed 8-inch square pan.
  2. Bake in preheated 350 degrees F oven 18 to 20 minutes or until wooden pick inserted in center comes out clean and top is golden. Cool completely on wire rack.
