Coconut pudding with cream Recipe

  • butter, for greasing
  • 50g/1?oz butter
  • 50g/1?oz caster sugar
  • 50g/1?oz fresh coconut, grated
  • 75g/2?oz self-raising flour
  • 25g/1oz cocoa powder
  • 2 free-range eggs
  • 50ml/2fl oz double cream
  1. Preheat the oven to 200C/400F/Gas 6.
  2. Grease a small loaf tin with butter.
  3. Place the butter, sugar, grated coconut, self-raising flour, cocoa powder and eggs into a food processor and blend to make a loose dough.
  4. Spoon the mixture into the greased loaf tin and place in the oven to bake for six minutes, or until golden and cooked through.
  5. Remove from the oven and turn out onto a plate.
  6. To serve, cut the cake into thick slices, place on plates and drizzle with cream.
