Club® Quiches Recipe

  • 36 Keebler® Club® Crackers, divided
  • 6 slices crisp cooked bacon, crumbled
  • 3/4 cup shredded Cheddar cheese
  • 1/2 cup thinly sliced green onion
  • 5 teaspoons all-purpose flour
  • 6 large eggs
  • 2 cups half and half (regular or fat free) or evaporated skim milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • fresh fruit
  • mint sprigs
  1. ace baking sheet in middle of oven and preheat to 350 degrees F. Place 6 crackers in plastic bag; seal bag and crush to fine crumbs. Butter (or coat with nonstick spray) 6 (3/4-cup) custard cups or ramekins. Sprinkle cracker crumbs on bottoms and sides of cups.
  2. In medium bowl, stir together cheese, bacon, green onions and flour. Spoon cheese mixture in bottom of cups, dividing evenly. Crack eggs into medium bowl. With wire whisk, lightly beat eggs. Whisk in half and half, salt and pepper. Pour in cups over cheese mixture.
  3. Place cups on baking sheet in oven. Bake 30 minutes or until set in centers. Cool 5 minutes. Run thin sharp knife around edge of each cup. Invert onto individual plates. Fan 5 Club(R) crackers beside each quiche.
  4. Garnish with fresh fruit and mint sprigs if desired.
