- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 pinch salt
- 2 large eggs
- 1 cup milk
- 1 cup buttermilk
- 1/4 cup canola oil (plus more for greasing the pan)
- Warm up waffle iron.
- In a large bowl, sift together flour, sugar, baking powder, baking soda, nutmeg, cinnamon, and salt.
- In a small bowl, whisk together eggs, milk, buttermilk, and canola oil. Pour over flour mixture and stir together. Do not overmix.
- For each waffle, lightly spray or brush waffle iron with canola oil. Pour in about 1/2 cup of batter and spread to edges with a knife. Cook for 30 seconds with lid open. Close lid and cook for about 4 minutes or until golden brown. Serve with your favorite topping like maple syrup, toasted nuts, syrup…
