Cinnamon Chip Muffins Recipe

  • 2 1/2 cups all-purpose flour
  • 1 (3.4 ounce) package instant French vanilla pudding mix
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup miniature semisweet chocolate chips
  1. In a large bowl, combine flour, pudding mix, cinnamon, baking powder, baking soda and salt. In another bowl, combine eggs, buttermilk, oil, honey and vanilla; add to dry ingredients. Whisk for 1-2 minutes or until combined. Fold in chocolate chips.
  2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
