Cider Chicken with Figs and Red Peppers Recipe

  • 4 boneless, skinless chicken breasts
  • 1/2 cup figs, halved
  • 1/3 cup red bell peppers, cut into bite-size strips
  • 1/2 cup apple cider
  • 1 cup apple butter
  • 1/2 teaspoon allspice
  • 2 tablespoons almonds
  1. Preheat over to 350 degrees F. Place chicken breasts in a baking dish coated with nonstick spray. In a bowl, mix together the figs, peppers, cider, apple butter, and allspice. Pour mixture over the chicken, sprinkle with almonds, and bake for 40 minutes.
  2. Serve over rice or egg noodles.
