- 4 boneless, skinless chicken breasts
- 1/2 cup figs, halved
- 1/3 cup red bell peppers, cut into bite-size strips
- 1/2 cup apple cider
- 1 cup apple butter
- 1/2 teaspoon allspice
- 2 tablespoons almonds
- Preheat over to 350 degrees F. Place chicken breasts in a baking dish coated with nonstick spray. In a bowl, mix together the figs, peppers, cider, apple butter, and allspice. Pour mixture over the chicken, sprinkle with almonds, and bake for 40 minutes.
- Serve over rice or egg noodles.
