- 5 pounds apples (preferably a tart variety or mix of varieties—Jonathans, Granny Smiths, Pippins, or Winesaps), peeled and sliced
- 1½ cup water or cider
- ¾ cup sugar or honey
- dash of lemon juice (optional)
- dash of cinnamon to taste
- dash of vanilla to taste
- Combine apples, water and sugar in a heavy saucepan. Cover and bring to a boil. Reduce the heat and simmer until just tender. Mash a bit with a potato masher for a chunky texture. Add lemon, cinnamon, and vanilla, as desired.
