Chocolate Cola Cake Recipe

  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup margarine
  • 1 cup cola-flavored carbonated beverage
  • 1/2 cup buttermilk
  • 2 eggs, beaten
  • 1 1/2 cups miniature marshmallows
  • 1/2 cup butter
  • 6 tablespoons cola-flavored carbonated beverage
  • 1 tablespoon cocoa powder
  • 1 (16 ounce) package confectioners' sugar
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sift together the flour, sugar, cocoa powder, baking soda, and salt into a bowl. Combine the margarine and cola in a saucepan over medium heat; bring to a boil. Stir in the flour mixture; then add the buttermilk, eggs, and marshmallows; pour the cola mixture into a 9×13 inch baking dish.
  3. Bake in preheated oven until a toothpick inserted into the center of the cake comes out clean.
  4. While the cake is baking, make a glaze by combining the butter, cola, and cocoa powder in a saucepan; bring to a boil. Place the sugar in a bowl. Pour the cola mixture over the sugar and whisk together. Stir in the pecans and vanilla. Pour the glaze over the cake while the cake is still hot.
