Chinese Mung Bean Dessert Recipe

  • 1/2 cup mung beans
  • water to cover
  • 2 pieces rock candy
  • 1/2 cup uncooked white rice
  • 2 tablespoons pearl barley, rinsed
  1. Place mung beans in a bowl and cover with several inches of cool water; soak for 1 hour. Drain.
  2. Transfer mung beans to a small saucepan; cover with water. Bring to a boil; reduce heat to low and simmer until mung beans open up, about 1 hour. Stir in rock sugar until dissolved.
  3. Combine mung beans, rice, and barley in a saucepan. Add 8 times the volume in water. Bring to a boil; reduce heat and simmer, covered, until rice and barley are soft, about 20 minutes.
