Chilli baked beans with crispy bacon Recipe

  • 1 tbsp olive oil
  • ½ onion, finely chopped
  • 1 clove garlic, chopped
  • ½ red chilli, deseeded and finley chopped
  • 2 tbsp tomato ketchup
  • 400g/14oz can cannellini beans, drained and rinsed
  • 1 slice ciabatta, drizzled with olive oil
  • 4 slices streaky bacon
  1. Heat the oil in a small saucepan. Add the onion, garlic and chilli and cook for 2-3 minutes or until the onions have softened. Add the ketchup and beans and cook for a further five minutes.
  2. Heat a griddle pan until hot. Add the ciabatta and bacon and frym,turning once, until the bread is griddled on both sides and the bacon is crisp. Drain the bacon on kitchen paper.
  3. To serve, place the griddled ciabatta onto a clean plate, place the beans on top and sprinkle the bacon on top.
