Chilled Gazpacho Recipe

  • 1 cucumber, peeled and diced
  • 1/2 green bell pepper, minced
  • 1/2 Spanish onion, minced
  • 1 cup Italian-style salad dressing (such as Wishbone®)
  • 2 tablespoons minced fresh basil
  • 1 (14 ounce) can diced tomatoes
  • 1 cup tomato juice
  1. Combine cucumber, green bell pepper, and onion in a large bowl; stir in Italian dressing and basil. Add tomatoes and tomato juice and stir well. Refrigerate until chilled, at least 30 minutes.
