Chickpea, spinach and onion fattoush Recipe

  • ½ red onion, finely chopped
  • 1 clove garlic, finely chopped
  • ½ beef tomato, de-seeded and finely chopped
  • 3 mini white pitta breads, torn into small pieces
  • 2 tbsp canned cooked chickpeas, rinsed and drained
  • 55g/2oz spinach leaves
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar, plus extra to serve
  • 6 fresh basil leaves, torn
  1. Combine all of the ingredients in a bowl and mix thoroughly to combine. Serve on a plate with an extra drizzle of balsamic vinegar.
