- 6 cups chickpeas, drained and rinsed
- 1 pound tomatoes, chopped
- 2 cups onion, chopped
- 1/2 cup oil
- 1/2 cup lime juice
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 2 teaspoons oregano
- 1 tablespoon dried mint
- 1 tablespoon salt
- 1 tablespoon black pepper
- Combine ingredients. Mix well. Serve.
