- 12 ounces boneless skinless chicken breasts, bite-size pieces
- 2 teaspoons olive oil
- 1 (14.5 ounce) can Hunt's® Whole Tomatoes, coarsely chopped
- 1/4 cup French salad dressing
- 4 cups fresh spinach leaves
- 2 mangoes, cut into cubes
- 2 medium avocados, cut into cubes
- Brown chicken in hot oil until golden.
- Add and mix tomatoes with chicken; bring to a boil. Reduce heat.
- Simmer uncovered for 5 minutes or until chicken is no longer pink in center. Add French dressing; heat through. Arrange spinach, mangos and avocados on serving dishes. Top evenly with chicken mixture; toss gently to coat.
