Chicken, Spinach & Mango Salad with Warm Tomato Vinaigrette Recipe

  • 12 ounces boneless skinless chicken breasts, bite-size pieces
  • 2 teaspoons olive oil
  • 1 (14.5 ounce) can Hunt's® Whole Tomatoes, coarsely chopped
  • 1/4 cup French salad dressing
  • 4 cups fresh spinach leaves
  • 2 mangoes, cut into cubes
  • 2 medium avocados, cut into cubes
  1. Brown chicken in hot oil until golden.
  2. Add and mix tomatoes with chicken; bring to a boil. Reduce heat.
  3. Simmer uncovered for 5 minutes or until chicken is no longer pink in center. Add French dressing; heat through. Arrange spinach, mangos and avocados on serving dishes. Top evenly with chicken mixture; toss gently to coat.
