- 3 ounces chicken breast, diced
- 1 stalk celery, diced
- 1 tablespoon red bell pepper, diced
- 2 tablespoons mayonnaise
- 1 dash cumin (optional)
- 1 dash fresh ground black pepper, to taste
- 1 low-carb whole wheat tortilla
- Dice the chicken, celery and bell pepper fairly fine.
- Stir in the mayo, pepper and cumin.
- Place the chicken salad at one end of the tortilla. Roll up the tortilla half way tucking in all the chicken salad. Then fold over the ends and roll up the rest of the way. Serve immediately.
