Chicken Salad in Cantaloupe Halves Recipe

  • 1 small yellow bell pepper
  • 1 (1 pound) firm-ripe papaya
  • 3 cups shredded cooked chicken
  • 1/4 cup minced fresh cilantro leaves
  • 2 tablespoons drained Safeway SELECT Capers
  • 2 teaspoons grated lime peel
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 2 small cantaloupes, cut into halves and seeded
  • Lime wedges (optional)
  • Salt and pepper
  1. Stem and seed bell pepper; finely dice pepper. Cut papaya into halves and discard seed; peel fruit and cut into 3/8-inch cubes.
  2. Combine bell pepper, papaya, chicken, cilantro, and capers. (If making ahead, cover and chill up to 4 hours.)
  3. Stir together lime peel, lime juice, and orange juice. Pour citrus juices over chicken mixture; stir to mix.
  4. Spoon chicken equally into melon halves; garnish with lime wedges. Add salt and pepper to taste.
