Chicken Quinoa Salad with Apples and Mozzarella Recipe

  • 2 cups water
  • 1 cup uncooked quinoa
  • 3 cups chopped cooked chicken
  • 3 Granny Smith apples, cut into 1-inch slices
  • 1 (8 ounce) package mozzarella cheese, cubed
  • 2 tablespoons dried parsley
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup raspberry vinaigrette dressing
  1. Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Spread on a platter; let cool.
  2. Combine chicken, Granny Smith apples, mozzarella cheese, parsley, thyme, salt, and pepper in a large bowl. Mix in raspberry vinaigrette. Chill salad for 20 minutes.
  3. Fold quinoa into the salad. Refrigerate until serving.
