Chestnut, apple and pine kernel stuffing Recipe

  • 1 small onion, chopped
  • grated zest of 1 lemon
  • 1oz (25g) butter
  • 4oz (110g) white breadcrumbs
  • 1 tbsp (15g) chopped parsley
  • 2 English dessert apples, peeled, cored and chopped
  • 2oz (50g) pine nuts
  • 4oz (100g) chopped tinned chestnuts
  • 2 medium eggs, beaten
  • salt and freshly ground pepper
  1. Preheat oven to 180C/350F/Gas 4/160C for fan oven.
  2. Gently sweat the onion and lemon zest in the butter for 10 minutes.
  3. Add the onion mixture to the other ingredients, binding with the eggs.
  4. Roll into balls and place on a greased baking sheet. Cook for 20 minutes or until brown. Serve around the turkey.
