Celeriac and Stilton gratin Recipe

  • 1 tbsp olive oil
  • 25g/1oz butter
  • ½ celeriac, peeled and grated
  • 100ml/3½fl oz double cream
  • 55g/2oz Stilton cheese, crumbled
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Heat the olive oil and butter together in a pan and gently fry the celeriac for 4-5 minutes, or until beginning to brown. Stir in the cream and cheese, then transfer to an ovenproof gratin dish. Bake in the oven for 10-12 minutes, or until golden-brown on top and bubbling.
