Cauliflower Piquant Recipe

  • 5 cups cauliflower florets
  • 1/2 cup roasted red peppers, cut into 1-inch strips
  • 1 tablespoon Safeway SELECT Capers, drained
  • 4 canned anchovies, patted dry and chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon Safeway SELECT Extra-Virgin Olive Oil
  • Salt and freshly ground pepper
  1. In a covered 2- to 3-quart pan over high heat, bring cauliflower and 1/2 cup water to a boil. Reduce heat and simmer until tender-crisp to bite, about 4 minutes. Drain.
  2. Combine peppers, capers, anchovies, lemon juice, and oil. Mix with cauliflower; season to taste with salt and pepper.
