Carrot-Walnut Salad Recipe

  • 1/3 cup golden raisins
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon vegetable oil
  • 2 teaspoons lemon juice
  • 1 teaspoon honey
  • 1/8 teaspoon salt
  • 4 large carrots, shredded
  • 1/3 cup walnuts
  • 1/4 cup chopped fresh parsley
  1. Soak raisins in hot tap water 20 minutes to plump them. Drain.
  2. In small bowl, combine vinegar, oil, lemon juice, honey, and salt.
  3. Just before serving, in medium bowl, toss carrots, walnuts, parsley, and raisins with dressing.
