- 1/3 cup golden raisins
- 2 tablespoons rice wine vinegar
- 1 tablespoon vegetable oil
- 2 teaspoons lemon juice
- 1 teaspoon honey
- 1/8 teaspoon salt
- 4 large carrots, shredded
- 1/3 cup walnuts
- 1/4 cup chopped fresh parsley
- Soak raisins in hot tap water 20 minutes to plump them. Drain.
- In small bowl, combine vinegar, oil, lemon juice, honey, and salt.
- Just before serving, in medium bowl, toss carrots, walnuts, parsley, and raisins with dressing.
