- 1 carrot, grated
- 2 tbsp grated, fresh horseradish
- 55g/2oz spinach, chopped
- 2 tbsp olive oil
- 1 tsp wholegrain mustard
- 1 tbsp white wine vinegar
- sea salt and freshly ground black pepper
- 25g/1oz cheddar cheese, grated
- In a bowl, mix together the carrot, horseradish and spinach.
- In a new bowl mix together the oil, mustard and vinegar and season, to taste, with sea salt and freshly ground black pepper.
- Pour the dressing over the salad mixture and toss well to coat.
- Sprinkle over the cheese and serve.
