- 2 pounds yellowtail snapper fillets
- Marinade
- 1 cup water
- 2 tablespoons lime juice
- 1 tablespoon lemon juice
- 2 teaspoons lemon zest
- 1/4 teaspoon orange extract
- 2 jalapeno peppers, finely minced
- 1 shallot, minced
- 1 tablespoon fresh thyme
- 2 teaspoons ground allspice
- 1 teaspoon cinnamon
- 1 tablespoon soy sauce
- salt and pepper to taste
- In a large shallow dish, add all of the marinade ingredients. Mix well.
- Add the snapper and turn to coat. Cover and refrigerate for 30 minutes to an hour.
- Grill or broil fish over very high heat for about 5 minutes. Carefully turned and cook another 2-3 minutes, until desired doneness.
