- 30g/1oz butter
- 2 tbsp brown sugar
- 1 orange, peel and pith removed, sliced into rounds
- ½ miniature bottle of brandy
- 2 tbsp amaretti biscuits, crushed
- 1 tbsp grated dark chocolate
- fresh mint sprig, to garnish
- double cream, to serve
- Heat the butter and sugar together in a small frying pan until the sugar has dissolved.
- Add the sliced oranges and cook for 2-3 minutes, until they are coated and caramelised.
- Add the brandy and carefully allow to flame.
- When the flames have died out, remove from the heat and arrange the orange slices around a shallow serving dish.
- Pour the sauce from the frying pan over the oranges.
- Sprinkle over the crushed biscuits, grated chocolate and garnish with a sprig of mint.
- To serve, drizzle over some double cream.
