Caramelised oranges with amaretti and cream Recipe

  • 30g/1oz butter
  • 2 tbsp brown sugar
  • 1 orange, peel and pith removed, sliced into rounds
  • ½ miniature bottle of brandy
  • 2 tbsp amaretti biscuits, crushed
  • 1 tbsp grated dark chocolate
  • fresh mint sprig, to garnish
  • double cream, to serve
  1. Heat the butter and sugar together in a small frying pan until the sugar has dissolved.
  2. Add the sliced oranges and cook for 2-3 minutes, until they are coated and caramelised.
  3. Add the brandy and carefully allow to flame.
  4. When the flames have died out, remove from the heat and arrange the orange slices around a shallow serving dish.
  5. Pour the sauce from the frying pan over the oranges.
  6. Sprinkle over the crushed biscuits, grated chocolate and garnish with a sprig of mint.
  7. To serve, drizzle over some double cream.
