Butterscotch Sauce, Two Ways Recipe

  • 1 1/3 cups sugar
  • ¾ cup corn syrup
  • 3 tablespoons butter
  • 2 tablespoons water
  • 3 or 4 tablespoons heavy cream
  1. Butterscotch Sauce I:
  2. Mix all ingredients except the cream, and bring to a boil in a heavy saucepan. Boil 1 minute. Cool and stir in the cream until smooth and satiny.
  3. Butterscotch Sauce II:
  4. Substitute dark brown sugar for the white.
