Butterscotch Bars Recipe
- 1 cup butter flavored shortening
- 1 cup sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup old-fashioned oats
- 1/2 teaspoon baking soda
- 1 (11 ounce) package butterscotch chips
- 1 cup chopped pecans
- FILLING:
- 1 (3 ounce) package cream cheese, softened
- 2 tablespoons butter or margarine, softened
- 1/4 cup sugar
- 1 egg
- 1 tablespoon all-purpose flour
- In a mixing bowl, cream the shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, oats and baking soda; gradually add to the creamed mixture. Stir in chips and pecans. Reserve 2 cups. Spread remaining dough into a greased 13-in. x 9-in. x 2-in. baking pan. In a mixing bowl, combine filling ingredients. Spread evenly over crust. Crumble reserved dough over filling. Bake at 375 degrees F for 40-42 minutes or until golden brown. Cool on a wire rack before cutting.
