- For Dry Rub:
- 1/4 cup brown sugar
- 2 tablespoons salt
- 1 tablespoon coarsely ground pepper
- 1 tablespoon dried basil
- 1 1/2 pounds boneless turkey breast
- For Salsa:
- 1 cup diced fresh pineapple
- 1 cup diced tomato
- 1/4 cup chopped red bell pepper
- 1/4 cup diced onion
- 1 tablespoon minced jalapeno pepper
- 1/2 tablespoon chopped cilantro
- 1/4 teaspoon freshly ground black pepper
- To create the dry rub, mix brown sugar, salt, pepper and basil in small bowl. Rub turkey breast with generous amount of rub, about 2 tablespoons, and refrigerate at least 2 hours.
- To make the salsa: Mix ingredients together and let stand for at least two hours.
- Place turkey on medium-heat grill, about 350 degrees F, for 45 minutes. Remove turkey from grill, slice and serve with pineapple salsa.
