BUSHS® Turkey Breast with Pineapple Salsa Recipe

  • For Dry Rub:
  • 1/4 cup brown sugar
  • 2 tablespoons salt
  • 1 tablespoon coarsely ground pepper
  • 1 tablespoon dried basil
  • 1 1/2 pounds boneless turkey breast
  • For Salsa:
  • 1 cup diced fresh pineapple
  • 1 cup diced tomato
  • 1/4 cup chopped red bell pepper
  • 1/4 cup diced onion
  • 1 tablespoon minced jalapeno pepper
  • 1/2 tablespoon chopped cilantro
  • 1/4 teaspoon freshly ground black pepper
  1. To create the dry rub, mix brown sugar, salt, pepper and basil in small bowl. Rub turkey breast with generous amount of rub, about 2 tablespoons, and refrigerate at least 2 hours.
  2. To make the salsa: Mix ingredients together and let stand for at least two hours.
  3. Place turkey on medium-heat grill, about 350 degrees F, for 45 minutes. Remove turkey from grill, slice and serve with pineapple salsa.
