BUSHS® Mexicali Bean Pot Recipe

  • 1 cup broccoli florets
  • 1 cup chopped onion
  • 1 medium sweet red or yellow pepper, cut into thin strips
  • 1 tablespoon vegetable oil
  • 1 (28 ounce) can BUSH'S® Vegetarian Baked Beans
  • 1 (6 ounce) can tomato paste
  • 1/2 teaspoon ground cumin
  • 1 cup coarsely crumbled tortilla chips
  1. In a large skillet saute broccoli, onion, and pepper in hot oil over medium-high heat for 2 to 3 minutes or until crisp-tender. Stir in beans, tomato paste, and cumin. Cover and simmer for 10 to 15 minutes or until thoroughly heated. Sprinkle with crumbled tortilla chips before serving.
