BUSHS® Hopping John Over Rice Recipe

  • 1 (15.8 ounce) can BUSH'S® Blackeye Peas with Snaps, undrained
  • 1 cup chopped onion
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup thinly sliced ham
  • 2 tablespoons vegetable oil
  • 3 cups hot cooked rice
  • Dash cayenne pepper
  1. Mix peas, onion and bacon dripping in saucepan; bring to a boil. Simmer on low heat 15 minutes.
  2. Serve pea mixture over hot buttered rice and season with cayenne pepper.
