- 2 thick slices of bread
 - 1 tbsp olive oil
 - 25g/1oz chopped red onion
 - 75g/2oz tinned tomatoes, chopped
 - 1 tbsp olive oil
 - 1 tbsp chopped fresh parsley
 - salt and freshly ground black pepper
 
- Heat a griddle pan and rub the bread with olive oil. Place the bread onto the griddle and cook for two minutes on each side, or until toasted.
 - For the topping, place the red onion, tomatoes and olive oil into a bowl and mix well.
 - Add the parsley and season, to taste, with salt and freshly ground black pepper.
 - To serve, place the toasted bread on the plate and spoon over the topping.
