Brown Rice and Apple Meat Loaf Recipe

  • 1 1/2 pounds lean ground beef
  • 1 1/2 cups Safeway SELECT Texmati Long Grain Brown Rice
  • 1 green apple, diced into 1/4-inch pieces
  • 1 onion, finely chopped
  • 1 (8 ounce) can tomato sauce
  • 2 Safeway SELECT Organic Large Eggs, beaten
  • 3 cloves garlic, minced
  • 1/3 cup Italian-seasoned fine dried bread crumbs
  • 1 1/2 tablespoons chili powder
  • 1 1/2 teaspoons caraway seed
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons dried oregano
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground pepper
  • 1/3 cup Lucerne Shredded Cheddar Cheese
  1. In a large bowl, combine beef, cooked rice, apple, onion, tomato sauce, eggs, garlic, bread crumbs, chili powder, caraway, cumin, oregano, nutmeg, and pepper. Mix ingredients until well combined.
  2. Place mixture in a 9- by 5-inch loaf pan, gently rounding top. Bake in a 350 degree F oven until top is browned and edges pull from pan sides, about 1 hour. Top evenly with cheese; bake until cheese melts, about 5 minutes longer.
  3. Let loaf cool at least 10 minutes before serving. Loosen edges of loaf with knife; using a spatula, gently lift loaf from pan onto a serving platter.
