Broccoli with Herbs and Cheese Recipe

  • 1 bunch broccoli, cut into florets
  • 2 cloves garlic, minced
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon dried rosemary
  • 2 tablespoons fat-free chicken broth
  • 1 tablespoon lemon juice
  • 1/4 cup flavored bread crumbs
  • 1 tablespoon Parmesan cheese
  1. Steam broccoli until tender, 5 to 7 minutes. Keep warm.
  2. While broccoli is cooking, coat a small, nonstick skillet with nonstick spray and heat over medium heat. Add garlic and cook for 30 seconds. Stir in lemon peel and rosemary, and cook for 1 minute. Add broth and lemon juice. Cook until liquid is reduced to 1 tablespoon (15 mL), about 30 seconds. Pour over broccoli and toss.
  3. Combine bread crumbs and parmesan. Sprinkle over broccoli.
