- 1 head broccoli, cut into florets, blanched
- handful fresh basil
- handful fresh parsley, chopped
- handful fresh coriander, chopped
- 1 orange, peeled, chopped
- 1 tbsp sesame seeds
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 50g/1žoz pomegranate seeds
- Place the broccoli, herbs and orange pieces into a bowl. Scatter over the sesame seeds, drizzle over the oil and vinegar and mix well.
- To serve, sprinkle the pomegranate seeds over the salad.
