Broccoli and Black Bean Quesadilla Recipe

  • 1 (10 ounce) package Cascadian Farm® frozen organic broccoli with Cheddar cheese sauce
  • 2 teaspoons olive or corn oil
  • 1/2 cup chopped red bell pepper
  • 2 cloves garlic, finely chopped
  • 1 medium red onion, chopped
  • 1 cup canned black beans, rinsed and drained
  • 2 tablespoons finely chopped fresh cilantro
  • 1/2 jalapeno pepper, finely chopped, if desired
  • 4 (8 inch) flour tortillas
  • Salsa, if desired
  1. Heat oven to 375 degrees F. Make broccoli with cheese sauce as directed on package.
  2. Heat oil in 10-inch nonstick skillet over medium heat. Cook bell pepper, garlic and onion in oil 2 minutes. Stir in beans; cook 1 minute. Stir in cilantro and jalapeno pepper. Remove from heat. Divide and spread bean mixture evenly over each of 4 tortillas. Top each with broccoli and cheese. Top each with 1 tortilla. Place on ungreased cookie sheet.
  3. Bake about 10 minutes or until hot. Cut into wedges; serve with salsa.
