- 1 corn or flour tortilla
- Leftover black beans from last night's dinner
- 1/4 cup low-fat Cheddar cheese
- 1 tablespoon spicy salsa (or more if you prefer)
- Microwave the tortilla for 10 seconds to warm. Mash leftover beans with a fork. Fill the tortilla with beans and cheese. Microwave for 30 seconds, roll it up and top with salsa.
