Breakfast Burrito, Southwestern Style Recipe

  • 1 corn or flour tortilla
  • Leftover black beans from last night's dinner
  • 1/4 cup low-fat Cheddar cheese
  • 1 tablespoon spicy salsa (or more if you prefer)
  1. Microwave the tortilla for 10 seconds to warm. Mash leftover beans with a fork. Fill the tortilla with beans and cheese. Microwave for 30 seconds, roll it up and top with salsa.
