- oil for deep frying
- 200g/7¼oz self-raising flour
- 2 tbsp baking powder
- 50ml/1¾fl oz milk, or enough to bind
- 12 blueberries
- 50g/1¾oz caster sugar
- pinch cinnamon
- Heat the oil in a deep pan for deep frying (CAUTION: Hot oil can be dangerous. Do not leave unattended).
- In a clean bowl, mix the flour and baking powder together with enough milk to form a pliable dough.
- Divide the mixture into 12 and shape into small balls. Press a blueberry into the middle of each one.
- Deep-fry for 1-2 minutes or until puffed up and crisp and golden.
- Remove with a slotted spoon and drain on kitchen paper.
- Toss in the sugar and cinnamon and serve warm.
