Blueberry-stuffed donuts Recipe

  • oil for deep frying
  • 200g/7¼oz self-raising flour
  • 2 tbsp baking powder
  • 50ml/1¾fl oz milk, or enough to bind
  • 12 blueberries
  • 50g/1¾oz caster sugar
  • pinch cinnamon
  1. Heat the oil in a deep pan for deep frying (CAUTION: Hot oil can be dangerous. Do not leave unattended).
  2. In a clean bowl, mix the flour and baking powder together with enough milk to form a pliable dough.
  3. Divide the mixture into 12 and shape into small balls. Press a blueberry into the middle of each one.
  4. Deep-fry for 1-2 minutes or until puffed up and crisp and golden.
  5. Remove with a slotted spoon and drain on kitchen paper.
  6. Toss in the sugar and cinnamon and serve warm.
