Blueberry Belgian Waffles Recipe

  • 4 Belgian Chef brand frozen low-fat waffles
  • 2 cups fresh blueberries
  • 3/4 cup water
  • 1 teaspoon grated lemon peel
  • 2 tablespoons sugar
  1. Bake the waffles as directed. Mash the berries in a large pot; add water and bring to a boil. Reduce the heat; add the lemon peel and sugar and simmer for 5 minutes.
  2. Allow the sauce to cool slightly, then top the waffles. Add whipped cream and a few fresh berries.
