Blue cheese mushrooms with garlic Recipe

  • 2 flat field mushrooms, stalks removed
  • 1 garlic clove, finely chopped
  • 85g/3oz Dorset Blue Vinny cheese, or other blue cheese, crumbled
  • 2 tbsp olive oil
  • 25g/1oz butter
  • 50g/2oz spinach leaves
  • salt and freshly ground black pepper
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Place the mushrooms open-side up on a baking sheet and sprinkle over the chopped garlic and cheese. Drizzle with oil.
  3. Transfer to the oven and bake for 5-6 minutes, or until softened and golden-brown.
  4. Meanwhile, heat the butter in a frying pan, add the spinach and stir until wilted. Season, to taste, with salt and freshly ground black pepper.
  5. Remove the mushrooms from the oven and serve with the wilted spinach piled on top.
