Bean and Roasted Red Pepper Bruschetta Recipe

  • 1 French baguette, cut into 1/2 inch slices
  • 2 tablespoons Archer Farms™ extra-virgin olive oil
  • 1 (16 ounce) can pinto beans, drained and rinsed
  • 1/2 cup Archer Farms™ roasted red pepper pasta sauce
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped cilantro
  1. Set oven control to broil. Place bread slices on baking sheets. Brush both sides with olive oil. Toast bread slices 2 to 3 minutes or until toasted, turning once.
  2. Meanwhile mix beans, sauce and onion in small bowl.
  3. To serve, place about 1 tablespoon bean mixture on each bread slice. Garnish with cilantro.
