BBQ Chicken Snacks Recipe

  • 1/4 cup cooked, shredded chicken
  • 2 tablespoons barbecue sauce
  • 2 teaspoons thinly sliced red onion
  • 2 Quaker® Lightly Salted or Salt Free Rice Cakes
  • 1 tablespoon low fat shredded sharp cheddar cheese
  • 1 teaspoon chopped fresh cilantro
  1. Combine chicken, barbecue sauce and red onion in small microwave-safe bowl; mix well. Microwave on HIGH (100% power) for 30 seconds, or until heated through.
  2. Divide mixture evenly between Lightly Salted Rice Cakes.
  3. Sprinkle with cheese and cilantro.
