- 2-3 ounces light rum
- 2/3 cup fresh pineapple, coarsely chopped
- Superfine sugar to taste
- 1/2 cup crushed ice
- Sprig fresh mint
- Combine the rum, pineapple and sugar in an electric blender and blend on high speed until smooth. Put the ice into a goblet and add the liquor. Decorate with the mint.
