- 4 (4 ounce) orange roughy fillets
- 2 tablespoons olive or vegetable oil
- 2 teaspoons Morton® Nature's Seasons® Seasoning Blend
- Roasted Red Pepper and Olive Salsa, divided ( See link below)
- 4 ounces crumbled feta cheese
- 1 (10 ounce) bag prewashed baby spinach leaves, remove stems and coarsely chop
- Brush fillets with oil; sprinkle all sides with Morton(R) Nature's Seasons(R) Seasoning Blend. Cover and refrigerate for 30 minutes. Spoon 1/4 cup Seasoned Roasted Red Pepper/Olive Salsa over each fillet.
- Bake at 350 degrees F for 20 minutes or until fish flakes easily when tested with a fork; sprinkle with feta. Return to oven for an additional 5 minutes to heat and soften cheese. Serve fish over spinach with additional salsa. Serve immediately.
