- ½ mango, skin on
- 1 lime, juice only
- 3 tbsp caster sugar
- 1 red bird's eye chilli, chopped
- 25g/1oz root ginger, chopped
- Preheat the oven to 200C/400F/Gas 6.
- Cut the mango in half. With a knife score a grid pattern into the mango, but not piercing through the skin. Turn the mango inside out to make a hedgehog shape. Place the mango onto a baking sheet and drizzle with the lime juice.
- Place into the oven to bake for eight minutes.
- Place the sugar, chilli and ginger into a small saucepan over a medium heat and cook until the sugar has dissolved and the sauce becomes sticky.
- To serve, transfer the mango onto a serving plate and drizzle with the sticky chilli sauce.
