Baked mango with ginger chilli syrup Recipe

  • ½ mango, skin on
  • 1 lime, juice only
  • 3 tbsp caster sugar
  • 1 red bird's eye chilli, chopped
  • 25g/1oz root ginger, chopped
  1. Preheat the oven to 200C/400F/Gas 6.
  2. Cut the mango in half. With a knife score a grid pattern into the mango, but not piercing through the skin. Turn the mango inside out to make a hedgehog shape. Place the mango onto a baking sheet and drizzle with the lime juice.
  3. Place into the oven to bake for eight minutes.
  4. Place the sugar, chilli and ginger into a small saucepan over a medium heat and cook until the sugar has dissolved and the sauce becomes sticky.
  5. To serve, transfer the mango onto a serving plate and drizzle with the sticky chilli sauce.
