Baja Chicken with Rice Recipe

  • 4 (6 ounce) chicken breast halves, without skin
  • 1 teaspoon McCormick Poultry Seasoning
  • 2 ounces Star Olive Oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups Albertsons Long Grain Rice
  • 1 cup Lawry's Baja Chipotle Marinade
  • 1 cup Mezzetta Jalapeno Stuffed Olives
  • 1 tablespoon chopped fresh cilantro
  • Salt and pepper to taste
  1. Rub the chicken breast with McCormick Poultry Seasoning. Heat the Star Olive Oil in a saute pan. Add the chicken breast and sear on both sides, about 2 minutes per side.
  2. Add the peppers and saute for 2 minutes. Add the Albertsons Long Grain Rice, Lawry's Baja Chipotle Marinate, Mezzetta Jalapeno Stuffed Olives and 2 cups of water. Bring to a simmer.
  3. Cover and let simmer until rice is tender, about 18-20 minutes.
  4. Stir in the fresh cilantro and season with salt and pepper.
