Baby scallops with a breadcrumb crust Recipe

  • 12 baby scallops, in their shells
  • 55g/2oz breadcrumbs
  • 1 garlic clove, peeled and crushed
  • handful flatleaf parsley, chopped
  • zest of 1 lemon
  • salt and freshly ground black pepper
  • dash olive oil
  1. Preheat the grill to medium.
  2. Place the baby scallops on a baking tray.
  3. In a food processor, mix together the breadcrumbs, garlic, parsley and lemon zest.
  4. Season the mix with salt and freshly ground black pepper, and sprinkle it over the scallops.
  5. Drizzle a little oil over the scallops and cook under the grill for a couple of minutes until crisp on top and scallops are cooked through.
