- 12 baby scallops, in their shells
- 55g/2oz breadcrumbs
- 1 garlic clove, peeled and crushed
- handful flatleaf parsley, chopped
- zest of 1 lemon
- salt and freshly ground black pepper
- dash olive oil
- Preheat the grill to medium.
- Place the baby scallops on a baking tray.
- In a food processor, mix together the breadcrumbs, garlic, parsley and lemon zest.
- Season the mix with salt and freshly ground black pepper, and sprinkle it over the scallops.
- Drizzle a little oil over the scallops and cook under the grill for a couple of minutes until crisp on top and scallops are cooked through.
