Baby Greens with Walnuts & Blue Cheese Recipe

  • 1 (10 ounce) package mixed baby lettuce leaves
  • 2/3 cup walnuts, roasted and chopped
  • 2/3 cup blue cheese, crumbled
  • 1/2 cup walnut oil, unrefined
  • 1/4 cup balsamic vinegar
  • 1 pinch salt and pepper, each
  1. Rinse and spin dry the lettuce. Be sure that there is a lot of variety of lettuce and baby greens. Pick out and discard any leaves that don't look perfectly fresh.
  2. Place lettuce in a large shallow bowl (such as a pasta bowl). Sprinkle on top the blue cheese and the toasted walnuts.
  3. Mix together and blend well the oil, vinegar and salt & pepper. Drizzle dressing over the salad and serve.
