Baa Baa and Kebabs Recipe

  • 1 pint cherry tomatoes
  • 1 pint whole button mushrooms
  • 1 yellow or red bell pepper, chopped into large pieces
  • 1 medium red onion, chopped into large chunks
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 4 lamb chops
  • 1 cup plain low-fat yogurt
  • 2/3 English cucumber (the seedless kind), chopped
  • 2 teaspoons fresh or dried mint, chopped
  1. Alternate vegetables on four skewers. Brush them with olive oil and sprinkle lightly with cumin. Grill the kebabs and chops for 5 minutes per side (until the chops are medium rare). Use the sauce for dipping.
