- 1 pint cherry tomatoes
- 1 pint whole button mushrooms
- 1 yellow or red bell pepper, chopped into large pieces
- 1 medium red onion, chopped into large chunks
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- 4 lamb chops
- 1 cup plain low-fat yogurt
- 2/3 English cucumber (the seedless kind), chopped
- 2 teaspoons fresh or dried mint, chopped
- Alternate vegetables on four skewers. Brush them with olive oil and sprinkle lightly with cumin. Grill the kebabs and chops for 5 minutes per side (until the chops are medium rare). Use the sauce for dipping.
