Avocado and goats cheese crostini Recipe

  • 18 thin slices baguette (1 baguette cut into rounds)
  • 1 clove garlic, halved
  • extra virgin olive oil
  • 1 ripe avocado, peeled and diced
  • 100g/3½oz soft goats' cheese
  • 1 tbsp lemon juice
  • 1 tbsp chopped basil
  • 1 tbsp diced red onion
  • salt and freshly ground black pepper
  1. Preheat the oven to 180C/360F/Gas 4.
  2. Brush the bread slices with the garlic and a little olive oil, and bake in the oven until golden and crisp (about 10 minutes). Remove from the oven and allow to cool.
  3. Meanwhile, make the avocado mixture. Mash the avocado with the goats' cheese.
  4. Fold in two tablespoons of olive oil, the lemon juice, basil and onion. Season to taste.
  5. Top each crostini with a mound of the avocado mixture, and serve.
