- 1/4 cup low-fat mayonnaise
- 1/2 cup fat-free sour cream
- 2 teaspoons fresh thyme
- 2 teaspoons lemon juice
- 1/2 teaspoon lemon peel
- 1 pound cooked turkey breast, cut in bite-size pieces
- 2 celery ribs, thinly sliced
- 1 apple – peeled, cored, and chopped
- 1/3 cup dried apricots, chopped
- 1/4 cup chopped walnuts
- In a large bowl, whisk the mayonnaise, sour cream, thyme, lemon juice, and lemon peel until smooth.
- Add the turkey, celery, apple, and apricots. Toss gently to coat. Sprinkle with walnuts.
