- 1/4 cup olive oil (preferably extra-virgin)
- 1/4 cup fresh lemon juice
- 2 teaspoons grated lemon peel
- 1/2 teaspoon dried crushed red pepper
- 6 cups coarsely torn arugula
- Whisk first 4 ingredients in large bowl. Season with salt and pepper. Add arugula to bowl and toss to coat.
